|In the centre of Leiden you can find restaurant De Hooykist on the Hooigracht. This location is a cosy place where you can enjoy a lovely meal of the day, but also have an intimate party with friends and family.
In the early days, people used a hay box to simmer potatoes, vegetables and meat. The meal was brought to the boil first and then put in the hay box for half an hour or more to simmer. This was a very energy efficient way of cooking. Restaurant De Hooykist nowadays does not use this ancient cooking method.
